It would not be unfair to say that Sardinians are a race of meat eaters. Meat is very firmly on the menu in Sardinia and for good reason. Quality. There is an enormous difference in quality of meat today, from what the animals are fed to where they are kept and how they are treated. All of these elements have a dramatic effect on the flavour and quality of the meat. In Sardinia many traditional methods of rearing are still maintained and a farmers passion for producing a quality product is foremost in his mind. It is said that some farmers in the hills of Barbagia care more for their flocks of sheep than they do for their wives!
