Green beans

600g of green beans
3 spring onions
60g of lard
Fresh mint
Salt
method
Chop off the ends of your beans and remove any stringy pieces. Slice the spring onion roughly and place in a pan (preferably a terracotta casserole) with the lard and fry over a very low heat. Now put the green beans on the pan with the onions and add a cup of slightly salty hot water. Cover the pan and cook for about half an hour adding more water if necessary. Serve with freshly chopped mint.
